Then, the health inspector is seen tied up and being thrown in the food locker by the rats. Near the end of the film, Remy says they could not keep the health inspector (nor Skinner) imprisoned in the food locker forever and were forced to release both of them,

Okay, pause it for a sec, Skinner tastes the Ratatouille because he likes it So then Skinner tells the rats to tell who cooked the ratatouille? so then the rats put Skinner with Health Inspector in a food vault to stay in forever.

However, Skinner gets surprised when Ego actually likes it. He races to the kitchen to find that Remy and his colony of rats cooked the dish, but he gets locked in the fridge. Despite this, the rats had to let him loose and Skinner reforms and sits in the new restaurant, being more proud at Linguini and the rats.

While it is unknown what became of the building that once housed the famous restaurant, Linguini, Remy and Colette all moved on to start a new bistro, "La Ratatouille",
